Essential Scan does not collect your data. There is no analytics, no advertising, no behavioral tracking and no third-party software development kit in the app. Nobody working on Essential Scan can see what you enter.
Your documents and their details are stored only on your device, protected by its passcode. They are included in your own device backup if you use one. A document leaves the app only when you share it.
The PDFs and photos you share or scan into Essential Scan, and the details found in them: titles, senders, dates, amounts, reference numbers and short summaries, plus any changes you make. Apple Intelligence reads documents on your device; nothing is sent to a server. The camera is used only when you choose to scan, and Face ID only if you turn on the lock. Essential Scan has no accounts and is not directed at children.
Purchases are handled by Apple. Essential Scan never sees your payment details. The app uses verified purchase records to check subscription access.
Settings in Essential Scan has a "Delete all documents" control that removes every document and its details from this device. Deleting the app also removes its local data.

You can ask what is held, ask for it to be corrected or deleted, or complain, by writing to essentialscan@humenhuk.com. You can also complain to the Israeli Privacy Protection Authority or to the data protection authority where you live.
